Roasted turkey with a sesame-inspired masala rub recipe

This turkey is dry-aged the day before roasting, meaning it’s seasoned with salt and covered overnight, leaving it in the refrigerator for moist, extra-juicy meat. Before putting it in the oven, mix in an easy rub inspired by sesame flavors – chili powder (preferably an original), cinnamon, allspice, cloves and black pepper.
