Diego Argotti’s Thanksgiving-Leftover Ramen Recipe

Every Thanksgiving, former Poltergeist chef Diego Argotti offers free bowls of noodle soup to anyone who needs a hot meal on the holiday. While the menu sometimes rotates, it always includes a Thanksgiving-inspired bowl of ramen. Here, Argotti shares his modified recipe for home cooking, which uses not only your leftover chicken, but also the extra sides. As with Argotti’s year-round culinary ethos, nothing is off-limits: Go ahead and add mashed potatoes and cranberry sauce to your ramen bowl, it just adds flavor.
Most of these ingredients can be found at most big box grocery stores, including packages of smoked whole duck legs (often sitting in the meat section) and leftover turkey necks and giblets (which often come with your Thanksgiving turkey). For items like Makrut lime leaves or fresh, packaged ramen noodles, specialty Asian markets like LAX-C, 99 Ranch and Silom Supermarket almost always stock them.
